Being new to the South Beach diet, Michael and I were struggling with phase one. In fact, we still are. Confession: I had a cafe latte this morning and Michael ate a whole wheat biscuit with gravy (made with flour). I found Kalyn's Kitchen blog and was relieved to see such a creative and supportive voice with so many tips for the phase one portion of the diet.
This morning, in an effort to provide a truly phase one alternative to the biscuits and gravy, I made Kalyn's Kitchen recipe for egg muffins. The recipe is very open to variation and as I didn't have much around, I added some mozzarella, green onions, paprika, and that was about it. The final result, while terribly burned on top, (I had the bright idea of turning on the broiler for a quick browning, then promptly forgot about them) was delicious.
Reminded Michael of a souffle, which set us thinking about making a true souffle--adapted to the South Beach diet of course. I think something very souffle-like could be done with whipped egg whites, a creamy cheesy sauce made from the yolks, all folded together and baked in ramekins for individual servings. South Beach with a certain amount of high-fallutin' attitude.
Perhaps our style is emerging. I really need to get a handle on this soon. I hate going expressly by recipes. I need to be able to take what's in the fridge and just go for it. Until we master all the principles of South Beach, this is the only way we can do this. The blog will serve as a sort of South Beach console, with rss feeds from several informative sites, a menu for each week, and posts about what works and what doesn't as we continue to experiment and get to that magical phase one regimen in the sky.As you can see from our menu, we're including a few phase two items largely because we're having a hard time letting go of carbs. We've decided to allow one whole grain carb per day until we can come up with enough good phase one options to make that final leap.
