Almond Crusted Tilapia

Another great idea from Kalyn's Kitchen--using almond flour to simulate breading on baked fish.  This was a truly inspired touch.  And that tablespoon of parmesan really added a nice dimension of flavor.  We weren't feeling too creative the night we did this, so we served it with a pile of sauteed whatever we could find in the fridge.  In this case, it was little button mushrooms and quartered zucchini.  All in all, a gratifying dinner, just to discover that we can simulate a savory crunch on the South Beach diet.
