Fajita Night
We ditched the moussaka in favor of fajita night, partially because I was having a hard time making the moussaka recipe South Beach-friendly and partially because we knew the kids would never tolerate some weird mushroom and eggplant dish for their dinner. I think I will give the moussaka a shot again, but maybe on a night when Michael and I are cooking mostly for each other. The big Mexican style-ish buffet suits our family well.
While little Miss O had a bean and cheese burrito, the guys had nachos with refries and steak. Yes, steak. Michael found a top sirloin at the store and couldn't resist. It turned out juicy and tender with a basic spice rub and a brief grilling on our stove top cast iron grill. I love me some rare steak.

Michael's Baja style cabbage salad.
Michael's crazy plate. Yes, those are tortillas. He just couldn't resist the whole grain low-carb tortillas at the store today, fully knowing it's not exactly phase one. We can't seem to make ourselves be phase one Nazis. Certainly, he's eating much healthier than usual and he thinks about every single thing he eats, which I consider half the battle. He wants everyone to know, for the record, that he only ate one of those tortillas.
Abbey's attempt at a gourmet plating. I pretty much ate the whole thing. I love fajita salad. I'm already thinking I'd like to take that baja style cabbage salad and serve it with grilled fish. YUM.

The baja style cabbage salad had a dressing of mayo, red chiles (We had a jar of Ziyad on hand), lime juice, a sprinkle of red wine vinegar, a dash of Cholula, and a teaspoon each of paprika and cumin. It was delish.
One more thing... the interesting thing to me was normally the tortilla has kinda been the objective of a fajita for me. The thing I looked most forward too. Weird, I know, but I have a thing for flour tortillas. But lately I haven't been as interested in them, and tonight I was halfway through a fajita and realized I didn't even want the tortilla. I think I may be making a breakthrough!
